Unexpected vet bills for Betty have left us without a penny to spare this month. So, I'm lusting after these prizes from a distance (for now). And, happily, I might add, because my kitty B is feeling much better & getting back to her normal spunky self. Three cheers for Betty!
3/4 cup flour 3/4 cup milk 1 egg 1 tbsp butter 1 tsp vanilla extract 2 tbsp sugar pinch of salt
In a large mixing bowl, whisk together flour and egg. Gradually, add in the milk, melted butter, vanilla, sugar, and salt. Mix until smooth.
Heat a lightly oiled griddle or frying pan over medium heat. Pour or scoop the batter onto the griddle, using approximately 1/4 recipe for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
Fill with: sugar, fresh strawberries, bananas, Nutella, etc.
